Fixed ratio table
The dry-yeast leg runs on fixed factors: instant is 0.75 times the active-dry volume, or multiply instant by 1.25 to get active dry. Fresh yeast converts by weight only, about 3 times the instant weight and 2.5 times the active-dry weight. Standard teaspoon densities back the volume entries, 3 g per teaspoon of instant, so teaspoons, tablespoons, and grams all resolve to the same result.
